Ravi DeRossi (Death & Co, Mayahuel, Amor y Amargo, Mother of Pearl) shook up NYC’s dining and drinking scene last year by vowing to convert as many of his properties as possible to vegetarian menus. Now he and partners Max Green and Souther Teague bring us a politically charged, not-for-profit bar. Profits will go to one of several causes that are actively being dismantled by the current administration (Planned Parenthood, environmental and LGBTQ causes and so on), as chosen by customers via donation tokens. Some of the country’s top bartenders take turns donating their time and cocktail creations as guest bartenders each week.
THE DRINK TO DRINK: Guest bartenders provide innovative variations on a rotating basis, while the main bar’s menu steers toward classics like Manhattans and Margaritas. The Hemingway Daiquiri is a well-balanced blend of rum, lime, grapefruit and maraschino liqueur.
KNOW BEFORE YOU GO: Drinks are $20 apiece. Pricey, yes, but part of that money goes toward making the world a more civil place for everyone.
