Most of us know that James Beard Award winner Donald Link’s Cochon is an amazing restaurant. What’s even more amazing is that around the corner, Cochon’s sandwich-focused sibling, Cochon Butcher, slings the same quality food for a fraction of the cost. Butcher is a dream for cured meat and sausage lovers, as well as those itching to see classic Southern ingredients styled in a fresh light. One example: the Buckboard Bacon Melt, which tops thick-cut, cheese-laden bacon with collard greens and smashes them between white bread. The à la carte menu features a sampler of not-to-miss bites, including boudin, head cheese with chow chow and pimento cheese sliders.
Know Before You Go: Meats and sides are also available to go, if you’re looking for an excuse to stock up on a few links of duck sausage or grab a couple of pounds of country terrine for the road.
