Though there are bigger selections in town now, when the Alembic opened in 2006, former bar manager Daniel Hyatt curated what was for a time the biggest American whiskey collection on the West Coast. Alembic was always the source for heavily allocated, rare bottles of whiskey and one of the few places that will still offer a Pappy Van Winkle tasting flight on the rare occasion those cultish bottles are released.
THE DRINK TO DRINK:
Current bar manager Larry Piaskowy carries on the long tradition of excellent Bourbon Old Fashioneds, Brown Derbys and Mint Juleps, alongside house creations like Bitter Buffalo, mixing Buffalo Trace bourbon with Spring 44 honey vodka, Cynar and Cocchi Americano.
