Combine the vodka, orange juice and apple juice in a mixing tin and stir.
Top with the beetroot shrub and absinthe.
*Beetroot shrub: Combine 16 oz of diced beets with 16 oz of white sugar in a clean jar. Seal tightly and allow to sit for 2 days in a cool, dry place. After 2 days, add 8 oz of white vinegar. Stir and strain into a clean bottle.
