Add all of the ingredients to a mixing glass with ice and stir until cold.
Double-strain over a large ice cube into a rocks glass, and garnish with an apple skin twist and green apple foam.
*Concord grape shrub: Combine 1 cup pureed concorde grapes (pushed through a sieve to remove seeds and skins) with 1 cup raw sugar in a small saucepan over medium heat. Stir until the sugar is completely dissolved. Add 1/4 cup white wine vinegar, 1/4 cup red wine vinegar and a pinch of salt. Bring to a boil and allow to reduce by half. Cool to room temperature before using. Will keep in the refrigerator for at least 1 month.
**Green apple foam: In a bowl, combine 450 grams Granny Smith apple juice, 10 grams citric acid, 120 grams granulated sugar and 5 grams gelatin. Stir and pour into an iSi canister, and charge once before using to top the drink.
