What can seven bartenders, 10 supporting staffers and 80 bottles of Appleton Estate Jamaica rum accomplish in 38 minutes? They can set a world record.

The team at Porco Lounge and Tiki Room created the world’s largest Daiquiri on November 11 at the Fabulous Food Show in Cleveland. Setting out with a goal of making a 100-gallon cocktail, the bartenders mixed rum, simple syrup, lime juice and ice in 12-quart batches and then poured it all into a massive barrel decorated to look like a Tiki mug. Each batch was tested by an independent third party to make sure it was consistent and accurate.

The final Daiquiri weighed in just short of the goal at 95 gallons, but it was more than enough to crush the previous 71-gallon record set in 2012 by El Floridita in Havana.

“We owe it to our generous sponsors, as well as to our personal commitment to craft cocktails, to not only make this fantastic and fun for all but to put out a quality product,” Porco owner Stefan Was said in an interview with the World Record Academy.
