Good video, except that Pisco is not Chilean. It is originally from Peru. Please do your research.

I agree with Micah, ice been doing this for years at Embury as well.

Likewise, Xavier Herit was doing this at Daniel in NYC back in 2010 as well. You can find instructions in their cocktail books "Cocktails For Him & Her" (Sept 2011) - it's even on the cover of the book.
I agree Nick's video is super cool. The story just needed to be researched a bit more or at least updated.

I appreciate the way you have pulled off the technique and the creative use age of tools to make it accessible to making at home. Just frustrating to read articles that are misguided and assuming this is the first this has ever been done. Very little in the culinary / bar world is truly original and we are all riffing off of something or another.

Hi Micah- I created this video and am in awe of the cocktail art you guys create at the Aviary. No article would be complete without an homage to your "old fashioned in the rocks" video.

I've never been to Chicago but first stop would be the Aviary for the cocktail tasting menu :)

Very creative. We started serving this at the Aviary in 2011.
